Shaved Fennel and Celery Salad
Description :
This light, refreshing salad features gets a boost of flavor from chopped capers and Parmesan, which complement the honey-Dijon vinaigrette.
Ingredient :
- 2 tbsp. olive oil
- 1 1/2 tbsp. fresh lemon juice
- 1/2 tsp. honey
- 1/2 tsp. Dijon mustard
- Kosher salt and pepper
- 2 bulbs fennel, cored and thinly sliced on mandoline
- 3 ribs celery, thinly sliced on bias
- 1/4 c. celery leaves
- 2 tbsp. capers, rinsed and chopped
- 2 oz. Parmesan cheese, shaved (3 tablespoons)
Direction :
In large bowl, whisk together oil, lemon juice, honey, Dijon, and 1/2 teaspoon each salt and pepper until combined. Add fennel, celery, celery leaves, capers, and Parmesan; toss to combine.
