Margarita Citrus Wedge Shots

Description :

Jello shots but make them classy by letting them set up in citrus rinds. Using an electric citrus juicer will make quick work of hollowing out the lemon, lime and orange halves.

Ingredient :

  • 4 limes
  • 2 small oranges
  • 2 lemons
  • 1/4 c. sugar
  • 1 1/4 oz. envelope unflavored gelatin
  • 1/2 c. tequila blanco
  • 1/4 c. triple sec
  • Kosher salt, for serving

Direction :

  1. Halve limes, oranges, and lemons lengthwise (from end to end) and juice, leaving rinds intact (you should get 1/2 cup each lime and orange juice and 1/4 cup lemon juice).
  2. Transfer juice to large liquid measuring cup. Using clean dishtowel, pull and discard fibers from inside rinds (flip rinds inside out to make it easier). Transfer each rind, cut side up, to well of muffin pan or small bowl.
  3. In small saucepan on medium, combine 3/4 cup citrus juice and sugar. Bring to a boil; then, whisking slowly, add gelatin and whisk to dissolve. Whisk in tequila, triple sec, and remaining 1/2 cup juice and pour mixture back into large measuring cup.
  4. Divide mixture among citrus rinds (you may have some mixture left over) and refrigerate until set, at least 12 hours, preferably up to 18 hours. Slice lemon and lime rinds in half lengthwise and orange rinds in thirds lengthwise. Serve with kosher salt for sprinkling.
