Cinco de Mayo Recipe

Cinco de Mayo is just around the corner! So to celebrate, thought I would do a quick round-up of some favorite Gimme Some Oven recipes that might be perfect for the occasion! Ingredient :
1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper, to taste
- Juice of 1 lime
- 8 small tortillas
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1/4 cup diced red onion
- 1/4 cup crumbled cotija cheese
Direction :
1. In a small bowl, mix together the olive oil, garlic powder, cumin, chili powder, salt, pepper, and lime juice.
2. Add the peeled and deveined shrimp to the bowl and toss to coat evenly with the marinade. Let it sit for 10-15 minutes.
3. Heat a large skillet over medium-high heat and add the marinated shrimp. Cook for 2-3 minutes on each side, until the shrimp turns pink and opaque.
4. While the shrimp is cooking, warm up the tortillas in a separate skillet or in the oven.
5. Assemble the tacos by placing a few shrimp on each tortilla. Top with sliced avocado, chopped cilantro, diced red onion, and crumbled cotija cheese.
6. Serve immediately and enjoy your delicious Olive Oil Lime Shrimp Tacos! You can also add your favorite toppings like salsa, sour cream, or hot sauce for an extra kick. Happy Cinco de Mayo!
