Chocolate Tres Leches Cake

This rich cake, soaked in three kinds of milk, is a sweet, creamy dream!

Ingredient :

  • 1 1/2 c. all-purpose flour, spooned and leveled
  • 1/2 c. unsweetened cocoa powder
  • 3/4 tsp. baking soda
  • 3/4 tsp. kosher salt
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. baking powder
  • 1 large egg
  • 1 c. packed brown sugar
  • 1 tsp. pure vanilla extract
  • 3/4 c. mayonnaise
  • 3/4 c. warm coffee
  • 1 (5-ounce) can evaporated milk
  • 3/4 c. sweetened condensed milk
  • 1 1/2 c. heavy cream, divided
  • 3 tbsp. confectioners’ sugar
  • Chocolate curls, for garnish

Direction :

  1. Preheat oven to 350°F. Lightly grease a 9-inch-square baking pan. Whisk together flour, cocoa powder, baking soda, salt, cinnamon, and baking powder in a bowl. 
  2. Beat egg, brown sugar, and vanilla with an electric mixer on medium speed until light in color, 1 to 2 minutes. Beat in mayonnaise just until combined. Beat in flour mixture alternately with coffee, beginning and ending with flour mixture, just until combined. Transfer batter to prepared pan. 
  3. Bake until a wooden pick inserted into center comes out clean, 24 to 26 minutes. Cool on a wire rack 10 minutes. 
  4. Whisk together evaporated milk, sweetened condensed milk, and 1/2 cup cream. Pierce top of cake several times with a wooden skewer. Slowly pour milk mixture over cake (about 1/3 cup at a time), allowing mixture to soak into cake. Cool completely. 
  5. Beat remaining 1 cup cream on high speed, 1 minute. Gradually add confectioners’ sugar and beat just until soft peaks form, about 1 minute. Spread evenly over cake and garnish with chocolate curls.
