Air Fryer Parmesan-Thyme Artichokes

Description :

Veggies crisp up faster in the air fryer!

Ingredient :

  • 2 tbsp. olive oil
  • 2 cloves garlic, grated
  • 2 tsp. thyme leaves 
  • Kosher salt and pepper
  • 2 14-oz cans artichoke hearts, halved and patted very dry
  • 1/3 c. grated Parmesan cheese, divided
  • 1 lemon
  • 2 tbsp. flat-leaf parsley, chopped

Direction :

  1. Heat air fryer to 400°F. In large bowl, combine oil, garlic, thyme, 1/4 teaspoon salt, and 1/2 teaspoon pepper. Add artichokes and gently toss to coat, then gently toss with 3 tablespoons Parmesan.
  2. Add artichokes to air fryer basket, cut sides up, and top with remaining 2 tablespoons plus 1 teaspoon Parmesan. Air-fry, shaking basket halfway through, until golden brown and crisp around edges, 10 to 12 minutes.
  3. Transfer to platter, then grate zest from just half of lemon and sprinkle with parsley.
